Though the Arabica harvest in Tanzania is due to have begun already, the team at Ngila have to postponed any picking for the last one and a half weeks, as they weren’t convinced that their cherries were the right level of ripeness.
They’ve since been rewarded for their patience - this week they measured the brix (amount of dissolved sugar) levels of a sample of cherries to find them higher/closer to optimal range.
