Ian of Equatoria Coffee in South Sudan has been sending us updates from their ongoing season. Currently temperatures are averaging 50 degrees celsius at midday, and the team are experimenting with shade drying to slow down the drying process, allowing natural and anaerobic coffees more time to ferment in the fruit of the coffee cherry while also keeping the good bacteria in the cherries alive.
